Taking a little break

Hey all, I know that I have only just started this blog but I have been feeling under the weather and have discovered that not only do I have mono but I have underactive thyroid and Vit. D deficiency! So until I get to feeling better and got more energy, it's been pathetic guys, I won't be posting any new recipes...but please keep checking back because I have 2 new recipes that will be coming.

Mmmmm, warm Pumpkin Pancakes!!

I love breakfast foods!  I would love it much better if I wasn't the one always making it but for now, it's me.  Can't wait until the littles are older and they can make ME breakfast, ;) Anywho, pankcakes are super yummy and I found this box of mix at Target, can't go wrong with pumpkin! They were GOOD! Nice and warm with syrup, yum! It tasted like fall....yes, it did! And the nice thing about them is that they are even good without the syrup.  My littlest little was just holding them and munchin.  I think they would also be good with some whip cream and fruit...Mmmm!  If you like pancakes and you like pumpkin, try them out!

Broccoli Casserole

Tonight I wanted to spruce up our broccoli.  The kids love it, and we played it simple tonight with chicken nuggets and broccoli. So it needed something extra. I jumped on Spark Recipes (love that site!) http://sparkrecipes.com/ and found this recipe.  Super simple and pretty good.

Ingredients
4 CUPS BROCCOLI CUT UP
2 CUPS CHEDDAR CHEESE
1 SLEEVE RITZS CRACKERS

Directions:

MELT CHEESE AND BAKE OVER BROCCOLI AND TOP WITH CRUMBLED CRACKERS. SERVING SIZE IS 1/2 CUP

I didn't put as many crackers on because I didn't have many, but I thought it was yummy, both my littles ate it up.  My husby thought the crackers were weird but I had buttery ones so it was a nice flavor.

Taco Salad

Sorry it's been so long since a post but I have been crazy tired!!  And as a result have been making pretty simple dinners! Here is one that I made a while ago and took pictures of because I was excited with how it turned out!  We love taco salad in our house and when we first got married tried to make our own taco bowls by frying them.  They were oily and although they tasted good, I'm sure they weren't good for you! So for days when I want dinner to be simple and filling, I make these! Yum!! I usually eat two, "don't you judge me!" (name that quote!!) Anywho, this is what I do....take large size tortilla shells and push them down inside a glass bowl/dish.  Bake them until they are golden on the edges and will hold there shape. Then you get these babies!!! Mine look wavy because I use a truffle dessert dish that I found at the store.  But they don't need to be wavy.


I made the smaller ones for the littles, I just cut the tortillas down a little and pushed them into muffin tins.  Perfect for little hands! Then to fill them I just put refried beans on the bottom, then meat, lettuce, tomato, cheese, and salsa, Yum-o!!!


My littles are a little picky, so they just have beans, meat and cheese. But, still super good!
