No Bake Strawberry Icebox Cake

So is it any surprise that I have a recipe for something sweet, NO! I love my sweets! I made this at my parents house for a family par-tay and not only was it easy it was super yummy!! I found the recipe on Pinterest (love pinterest!!) and everyone loved it!

Is there anything better the cream, chocolate, strawberries and graham crackers? So easy and you make it ahead of time so that the crackers go soft.  YUM! 

No-Bake Strawberry Icebox Cake
serves 8
2 pounds fresh strawberries, washed
3 1/4 cups whipping cream, divided
1/3 cup confectioners sugar
1 teaspoon vanilla
1/2 teaspoon rosewater (optional)
4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
2 ounces dark chocolate, finely chopped

So many sweets!!

So I have discovered that I am not so good with blogging! I have good intentions, take pictures and think oh, I can blog about this but then sitting down and actually doing it is my problem!  I have made so many yummy things this past month that I wanted to share and my mom was here for two short days but while she was here we discovered the most wonderful store!! World Market!! Holy-Hanna! That place is AW-SOME! I knew it had furniture and stuff like that but there is a FOOD section too!! With stuff from the UK, and Italy and Japan and so many other places! I found SO many goodies that I love and miss from England there, I was pretty much squeeling in the isle!! Meep!

Anywho, while my mom was here she taught me how to make pastry dough and with it we made pasties and jam tarts.  And we also made some Viennese Whirls, it's a yummy melt in your mouth cookie with buttercream and jam sandwiched in the middle.  My grandmother used to make them.  I also made a yummy icebox cake that is just homemade cream (whipping cream, vanilla and powdered sugar) layered with graham crackers and freshed sliced strawberries and then you refrigerate it til the graham crackers soften and then drizzle with chocolate right before serving! SO easy!

For my birthday I made a chocolate cake with chocolate ganache, and then for christmas I made a chocolate cake with white chocolate peppermint ganache! So moist and so good! I also made a Jamie Oliver recipe, it was a chocolate fridge cake with nuts and dried fruit and smashed english buiscuits. Yum is all I have to say!

And while you are saying "dang, that is alot of sweets, how many lbs did she pile on?" I did gain 5 lbs from the lack of exercise and thyroid problems.  So I might look like I am 4-5 months pregnant, and yes a man asked me if I was expecting or had delivered, not my best day! I am enjoying cooking. Back to the butt whooping exercise and hopefully I can shed some of these lbs! But I got to spend some time with my mother and learn some of her recipes and my grandmothers, time and lbs that I wouldn't trade for aything!

I apologize for the lack of pictures but my camera charger is in the mail on it's way from MD, yes I left without it. Sigh! But it should be here tomorrow! Oh and I forgot to mention I got a new CAMERA for christmas from my loverly family!!! And DSLR, I am so stoked! Had a great trip to MD to spend a late Christmas and New Years with my family and to visit with my grandfather who is visiting from England.
