Pork Chops

I have a recipe that I like to use when making pork whether it be a tenderloin or pork chops but I love the flavor! Unfortunatly I don't remember where I got it. Just put the following ingredients in a shallow dish to dip the pork in:
1 Tbsp italian bread crumbs
1 tsp dried Thyme
1 tsp dried Basil
1 tsp dried Onion flakes
3/4 tsp salt
1/2 tsp pepper

Dip the pork in the mixture til it's coated on both sides. Place in a baking dish and bake at 400. I believe I did it for 25 minutes but I just kept an eye on it.  It was so yummy with the stuffing and brocolli! Sorry I don't have a picture but we have church until 4pm and by the time we get home I'm starving!! So I made dinner and then scarfed it and didn't even think about a picture til I was half way through. :)

Chocolate Chip Cookies

Mmmm, tonight I made homemade chocolate chip cookies! They were SO good!  I only made one batch (like 7 cookies) and the kids and I ate them up..more in the fridge for another day! I wanted something sweet and turned to the fabulous ladies at http://www.ourbestbites.com/ . They have a recipe for chocolate chip cookies, seriously, you have to try them out!!  If you like gooey, chewy cookies, these are the ones!

While making the cookies, my little ones were around the counter watching and I was scraping the flour off the side of the kitchen aid so it would all mix in, while it was on,  and got a little too close with the spoon and it got caught and shot across the room!!  Luckily there were no casulties! We all had a good laugh though!

Lemon Linguine

Tonight for dinner I needed a simple recipe because I needed to go to the store and was lacking in alot of the basics.  I came across a great simple recipe and I found it on this blog http://baskersfunfoods.blogspot.com/2009/06/lemon-linguine.html 

It was so easy, and so good we all loved it!  My daughter (2 1/2) ate seconds!!  It wasn't too lemony, and was a nice quick meal.  We ate it with a side of peas and it was good! I accidentally deleted the photo that I took all nice on the plate so I had to take a picture of the leftovers...

Pizza!


Pizza! Who doesn't love pizza?? There are many different kinds that we like in our house...bbq chicken pizza, pepperoni, cheese, hawaiin, cheeseless (yes, that's right, NO cheese! Crazy huh!?! A friend in college couldn't eat cheese so this is what she got and you know, it was good!), and many others but, since the husby was gone this week I made this little beauty for me! And I ate the whole thing! Don't judge, it was a small pizza!

I saw this pizza on one of my favorite blogs....ourbestbites.com  I saw a picture of this pizza here http://www.ourbestbites.com/2009/06/tutorial-bbq-grilled-pizza/
but had to guess on some of the ingredients as it's more a tutorial on grilling prizza, not this specific kind.  I bought this at the store for my base instead of making dough...
 and bought my favorite spaghetti sauce, tomato and mozzerella cheese.  The store I went to didn't have fresh basil so I had to use dry, but it was still yummy!! Next time I want to try it with the pesto sauce.  Made a really yummy personal pizza!


Cheddar and Broccoli Quesadillas

When the husby and I were dating he made dinner for me one night and it was so super quick and yummy! I couldn't believe how good it was for being so simple! You will need tortillas, cheese, broccoli, chicken, butter, salt and pepper to taste.  Cook the broccoli (I steam mine in the microwave), cut it up small, add shredded cooked chicken (you can use rotisserie, the fully cooked meat you can find in the deli section, leftovers, whatever you have), cheese and mix in a bowl.  Get your pan ready, spread a thin layer of butter on the tortillas so they get crispy when they cook, place one (butter side down) in the pan, put your filling in and then another tortilla (butter side up).  Let if get warm and when the cheese starts to look melted and the under side is starting to brown, flip your quesadilla.  This can be tricky, I always end up with bits flying out. When they are done, cut them into slices like you would a pizza and enjoy!

The beginning....

6 years ago, my husby and I got married.  It was a rainy day so all our pictures were taken inside unfortunatly.  I love him with all my heart and couldn't wait to be his wife, I never wanted to leave him.  I hate to be away from him, :) I tried to jump into the new wife role and cook and bake but let me tell you, I was NO good at it!! My sweet husby never complained and ate whatever I served him. He used to joke that I didn't cook, I "warmed" things up! I didn't like cooking, but now I do. Lately, years down the road, I have found joy in cooking.  I find it relaxing and satisfying to make something delicious for my family.  There's something nice about hearing your 5 year old say "this is the best thing I ever tasted, even gooder then mac n cheese!" YES!  Success!! I love to search blogs and get recipes and share what I have tired, so that is what you will find here!
